8c38502 created the issue

Can`t change default Application for FTP and SFTP under macOS 10.14 (Fetch is also installed). After you made your changes and look again in the Preferences the old default Application will stick. Changing the default Application in Fetch will work without a problem.

Please try to rebuild the launch services database using

/System/Library/Frameworks/CoreServices.framework/Versions/A/Frameworks/LaunchServices.framework/Versions/A/Support/lsregister -kill -r -v -apps u
