I have just updated Cyberduck to Version 7.8.3 for my iMac (MacOS Mojave 10.14.6, 32 GB RAM). However, I have experienced very high memory usage when transferring files. During transfer of a 5GB file, the UNIX command 'top -omem' reports MEM: 102G+ and CMPRS: 98G. Of course, this is not acceptable.
I have temporarily solved the problem by downgrading to Version 7.8.2. For the same file transfer, 'top' reports: MEM: 383M and CMPRS: 0B.

Duplicate for #11151. Please try to disable Preferences → Transfers → Generals → Downloads → Segmeneted downloads with multiple connections per file as a workaround.
