The dropdown box to choose an external editor is greyed out, even though I have Taco HTML Edit installed.

Make sure this is Taco 2.0 or later.
Restart both Cyberduck and Taco Edit.
Try rebuilding the launch services database using (refer to (http://www.macosxhints.com/article.php?story=20071102084155353))

/System/Library/Frameworks/CoreServices.framework/Versions/A/Frameworks/LaunchServices.framework/Versions/A/Support/lsregister -kill -r -domain local -domain system -domain user
